Dioscorea alata. Purple Yam. Or as the Filipinos know it, ube.

These fresh purple yams from Queensland have a mildly sweet, earthy and nutty taste - similar to taro or sweet potatoes. The purple yams, turn any dish purple due to its anthocyanins.

Fresh Australian Purple Yam/Ube season is usually from April to November.

NOTE: These are not the same as the purple sweet potato, or the Hawaiian/Okinawan sweet potato.
