Jeruk Limo. Citrus amblycarpa hybrid. Grown in Sydney organically, this lime is a possible hybrid of the djerook leemo of Java, Indonesia.
The jeruk limo is a dimpled tight-skinned citrus with minor similarites to the makrut/kaffir lime. Inside, its yellow-green pulp is quite acidic. While it has a strong sour tang, it is quite fragrant with an astringent gummy texture.
DO NOT MISTAKE this jeruk limo for the limau kasturi / calamansi. They are vastly different in taste, aroma and texture on the palate. The jeruk limo has an astrigent tasting yellow-green pulp, compared to the calamansi which has a vibrant orange pulp that is sweeter and more floral in aroma.
Best known in Indonesian cuisine as jeruk sambal, or as an addition to bakso and many other regional Indonesian dishes.
